Sarde in saor typical Venetian dish

Sardines in saor are a really tasty antipasto of Venetian cuisine, it is a terrine of fried sardines that are served with onions cooked with vinegar and caramelised pine nuts and raisins.

The saor is a method of conservation of sailors, in fact, in antiquity, when it was necessary to store fish on ships for a prolonged time, this particular preparation was used that allowed to keep the fried fish excellent for several days. The sardines in saor are in fact even better if tasted after at least 24 hours of rest.
